Roasted herbed sweet potatoes with bacon and onions
Nothing — yes, nothing could be finer this time of year than a simply succulent sweet potato dish. Please! Give this a try. I think you’ll love it as much as my family. It’s pretty easy to make, too!
3 thick slices applewood-smoked or peppered bacon, diced
2 pounds sweet potatoes, peeled and cut into 2-inch chunks
2 medium onions, cut into 8 wedges
1 teaspoon each salt and dried thyme
¼ teaspoon black pepper
Preheat oven to 375°F. Cook bacon in large deep skillet until crisp. Remove from heat. Transfer bacon to paper towels. Add potatoes and onions to drippings in skillet; toss to coat. Stir in salt, thyme and pepper. Spread mixture in single layer in ungreased 15 x 10 x 1-inch jellyroll pan. Bake 40 to 50 minutes or until golden brown and tender. Transfer vegetables to serving bowl; sprinkle with bacon.

Time seems to pass by faster and faster and once again…..
Fall has arrived!
It’s such a fun time of year with fall carnivals and, I just love trick or treat time and seeing how creative kids are every year with the different costumes.
It’s also a good time of year to go around the house to see what general maintenance needs to be done.
Drag the ole ladder out and check to see if those gutters need cleaning. Take care and be sure to use that ladder safely, of course.
Do a good thorough walk around the house, and see if any areas need any grout touch up or fresh caulking around windows.
This is also a good time to remove any trees or shrubs that may have not survived through the summer and get them replaced.
Just remember… general maintenance now will help things last a lot longer. Neglecting maintenance issues or putting them off could be VERY costly in the future.
