Rain and cold weather have kept us inside all winter and now we’re looking forward to spending time outside this spring. Alice talks about several changes that are coming in with the warm front this spring!

Easter Cake

All ages love this. Easy and fun to make with children.

  • 1 white cake for 2-3 layers
  • white icing
  • lemon curd (optional)
  • 1 cup unsweetened coconut
  • 1 to 2 drops green food coloring
  • candy for decorating



Have on hand coconut, decorative chocolates such as sheep or lambs, jelly beans for eggs, chocolate rabbits. Check out a candy store to gather ideas for decorating the top of a cake or cupcakes. 

For the white cake, I like to make a homemade cake but a box cake is fine.

If you like lemon curd (this can be purchased in a jar) it’s fun to use between the layers.  Icing can work too. 

You can ice the sides of the cake or leave them bare.  The top needs a nice amount of icing to anchor the candy. 

Coconut “grass”
Add at least one cup unsweetened coconut and 1-2 drops green food coloring in a zip-lock bag.  Shake until the coconut is uniformly green.  Adjust the color by adding additional drops of food coloring. Cover the top of the cake and add the decorations. 


Loving CHANGE!

We have spoken often about various “changes” related to real estate. Spring-like weather is finally in the air. After so much rain and cold weather we’re all looking forward to seeing weather where we can be “outside”.

It’s a great time to walk around your house and check for possible issues with your drainage, caulking, and paint—not to mention checking the structure. Call maintenance companies now to get on the list for repairs, if necessary.

Have you noticed all the commercial construction?

Housing continues to develop in Oklahoma City’s “downtown” area. Restaurants and manufacturing have seemed to multiply in the last year. The same is true for the Memorial Road area.

CHISHOLM CREEK is the hot spot for “play and dining”. It’s positioned to serve both North OKC and Edmond. Check it out---it’s where Cabella’s and Top Golf are located. We hear COSTCO is on the drawing board too.

If you hate traffic, you’ll love the idea of living, working, and playing in either area.

A lot is happening at Covell and I-35 in Edmond, too — convention center, hotel, and lots more! It’s a great time to get out and see our city.
